- 4 boneless, skinless chicken breasts (small, about 6 oz each, or use chicken tenders)
- 2 cups hard pretzels (crushed, see instructions below)
- 1/4 cup olive oil (or canola oil if you don't want an olive oil flavor)
- 1/4 cup coarse ground mustard (whole grain/)
- 2 Tbsp. Dijon mustard
- 2 Tbsp. water (⅛ cup)
- 1 1/2 Tbsp. red wine vinegar
- kosher salt (to taste)
- 1 Tbsp. honey (to make a honey mustard sauce, optional)
