- 1 tsp. Chinese five-spice powder
- 1 tsp. salt
- 1 tsp ground pepper
- 2 lemongrass stalks (finely chopped or 1 tsp lemongrass paste)
- 3 large garlic cloves (minced)
- 3 Tbsp. soy sauce
- 1 Tbsp. dark brown sugar (soft)
- 4 shallots (finely chopped)
- 2 green chillies (finely chopped)
- 4 carrots (peeled and sliced into rounds)
- 1 lb. butternut squash (peeled and cubed)
- 14 oz. chopped tomatoes
- 1 cinnamon stick
- 2 star anise
- 2 kaffir lime leaves
- 1 1/2 cups beef stock
- 4 Tbsp. vegetable oil (or as needed)
- 1 Tbsp. cornflour (cornstarch diluted in a little cold water)
- 1 handful fresh basil leaves (to garnish, optional)
