- 1 tsp. vegetable oil
- 4 lb. beef short ribs (cut into 2 to 3 rib segments)
- 2 tsp. kosher salt
- 1 onion (large, chopped)
- 6 cloves garlic (peeled and smashed)
- 2 jalapeno peppers (diced, remove the seeds if you want to reduce the heat, substitute serranos if you want to increase the heat)
- 2 sprigs fresh thyme (or 1 teaspoon dried)
- 1 Tbsp. tomato paste (I like Amore from a tube)
- 1 cup chicken stock (preferably homemade chicken stock or water)
- 1 cup beer (Any amber lager will do; Negro Modelo or Bohemia match the Mexican theme of the recipe)
- 28 oz. diced tomatoes with juice (I prefer Muir Glen Fire Roasted Diced)
