- 14.5 oz. chopped tomatoes (or crushed, I used fire roasted organic)
- 2 cups red lentils
- 3 Tbsp. tomato paste
- 1/2 onion (diced)
- 4 cloves garlic (minced)
- 1 1/2 inches fresh ginger (peeled and minced)
- 2 tsp. Better Than Bouillon Vegetable Base
- 5 cups water
- 2 1/2 Tbsp. curry powder
- 1 tsp. smoked paprika
- 1/2 tsp. cayenne (you can use more if you like it spicy)
- 1 cup fresh spinach (or so of, chopped)
