I altered the recipe a little by adding the carrots and potatoes to the pot when I added the seared meat back to the pot of sautéed onions, celery, green bell pepper, and garlic. I then set the pot to “stew” and the timer automatically set to 45 minutes. Delicious!

Made it with pumpkin and Shitaki mushrooms instead of potatoes in instant pot
