- 1 bell pepper (diced)
- 1 can rotel (10 oz.)
- 1 can corn (15.25 oz, not drained)
- 1 can black beans (15.25 oz, not drained)
- 1 cup beef broth
- 1 can cream of mushroom soup
- 2 1/2 cups noodles (we used farfalle)
- 2 cups cheese (shredded, Mexican blend is great)

This turned out yummy! We substituted green chilis for the bell pepper. And crumbled Fritos on top with sour cream! Will for sure make again!

Great the first night and we have had leftovers twice. I made a huge pot full and still have more in the freezer for a quick meal. We tried it as a casserole, then wrapped in tortillas and the third time with tortilla chips as wonderful loaded nachos. The possibilities are endless with this dish. Thank you.😉
