- 4 lb. boneless pork loin (/sirloin roast or pork shoulder)
- 2 tsp. onion powder
- 2 tsp. kosher salt
- 1 1/2 tsp. garlic powder
- 1 tsp. pepper
- 1/4 cup chicken broth (or water)
- 1 batch barbecue sauce (this to die for Hawaiian, or use your favorite store bought and add some diced pineapple to it)
- corn tortillas (or whole wheat flour tortillas)
- cashews (Chopped, for topping)
- 1/2 cup mayo (Sir Kensington’s Avocado Oil, you can substitute with regular mayo, but this stuff is AMAZINGLY flavorful!)
- 1/2 cup greek yogurt
- 4 Tbsp. honey (depending on how sweet you want the slaw)
- 2 Tbsp. apple cider vinegar
- 1 tsp. kosher salt
- 1/4 tsp. black pepper
- 6 cups cabbage (thinly sliced, my favorite is a combination of Napa and purple cabbage, but green cabbage or the bagged coleslaw mix in the produce department will work to)
- 1 red bell pepper (thinly sliced)
- 1 cup pineapple (fresh, diced)
- 8 oz. water chestnuts, drained and chopped (can of sliced)
- 1/4 cup green onions (diced)
- 1/2 cup roasted cashews (chopped salted, plus more for topping tacos)
