- 1 tsp. salt
- 1/2 tsp. canela
- 2 cups granulated sugar
- 3 eggs
- 1 cup vegetable oil
- 2 tsp. vanilla bean paste (or vanilla extract)
- 20 oz. crushed pineapple with juice (do NOT drain)
- 1 1/2 cups finely chopped walnuts (divided)
- 1 cup flaked sweetened coconut
- 8 oz. cream cheese (package, softened)
- 1/2 cup butter (softened, 1 stick)
- 1 tsp. vanilla bean paste (or vanilla extract)
- 4 Tbsp. heavy cream (amount depends on personal preference heat, and humidity in the air - start with 2 and go from there)
- 2 cups powdered sugar (sifted or whisked to remove lumps)
