- 300 grams firm tofu (packet, cut into 0.5cm-wide pieces)

- 2 cms ginger (piece, 10g, finely grated)
- 2 Tbsp. miso paste
- 5 spring onions (white part finely chopped, green tops finely sliced)
- 1/3 cup rice vinegar (each, mirin and soy sauce)
