  • 1 white onion (medium, cut into 1/8ths)
  • 6 cloves garlic
  • 3 teaspoons kosher salt (or more to taste)
  • 4 cups green leaf lettuce (packed, loosely chopped)
  • 2 cups cilantro (packed)
  • 2 pounds boneless, skinless chicken breast
  • 50 ounces hominy (drained and rinsed)
  • 6 radishes (thinly sliced)
  • 1/2 head iceberg (shredded)
  • 2 limes (cut into wedges)
  • 1/2 avocado (sliced)
  • 2 tablespoons cilantro (for serving)
