- 1/2 cup oat flour (I ground some of my gluten-free rolled oats for this)
- 1/4 cup flour (Banana, Or more buckwheat or oat flour if you don’t have banana)
- 6 packets stevia (or 1/4 your favorite sugar)
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. canela
- 1/2 tsp. banana extract
- 1/2 tsp. madagascar bourbon vanilla extract
- 1 cup unsweetened almond milk (or your favorite non-dairy milk)
- 1/4 cup banana (Mashed Super Ripe)
- 1/2 cup fresh blueberries
- 1/4 cup zucchini (Grated)
- 1/2 tsp. apple cider vinegar
- 1 Tbsp. flax seed (Milled)
- 1/4 tsp. unsweetened shredded coconut (per topping for each muffin)
