Description
Poutine is a classic Canadian dish hailing from the province of Quebec. Poutine typically features a bed of thick potato fries covered in a gravy and cheese curds on top. This recipe puts a slight twist on the traditional recipe, substituting mozzarella cheese instead of cheese curds. However, the classic gravy is still present and absolutely delicious. - vegetable oil (for frying)
- mozzarella cheese
- 1 Tbsp. butter
- 1 Tbsp. flour
- 500 mL chicken stock
- 1 Tbsp. beef broth (optional)

Directions
- Heat up the stock and set it aside.
- In a pot, melt the butter and whisk in the flour until there are no more lumps.
- Add the hot stock, whisking constantly. Simmer lightly for 5 minutes until the sauce reduces and thickens. Add the beef juice (optional).
