- 3/4 cup spanish chorizo (finely chopped, cured, spiced pork sausage, Firm like salami. Not the soft Hispanic chorizo, 3 ounces)
- 2 Tbsp. olive oil
- 2 onions (finely chopped, 2 cups)
- 3 garlic cloves (finely chopped)
- 1 red bell pepper (finely chopped)
- 1/2 green pepper (finely chopped, 1/2 cup)
- 1 California bay leaf (Turkish or 1/2)
- 1/2 tsp. salt
- 1/4 tsp. dried oregano (crumbled)
- 1/2 lb. potato (yellow-fleshed, such as Yukon Gold, 1 large)
- empanada dough (recipe below)
- 1 egg (lightly beaten with 1 tablespoon water)
- 2 1/4 cups unbleached all purpose flour
- 1 1/2 tsp. salt
- 1 stick unsalted butter (cold, cut into 1/2 inch cubes)
- 1 large egg
- 1/3 cup ice water
- 1 Tbsp. distilled white vinegar
