- 1 lb. sweet potatoes (peeled)
- 1 lb. gold potatoes (peeled)
- 1 clove garlic (minced)
- 3 Tbsp. butter
- 5 sprigs thyme leaves (removed, about 3/4-1 teaspoon leaves)
- pepper

- crème fraiche

Directions
- Bring a large pot of salted water to a boil. Slice all potatoes into ½-inch slices, then quarter (or really cut however you’d like!). Place potatoes in boiling water and boil for about 5 minutes, or until tender but not falling apart.
- Remove from slotted spoon into cold water. Rinse a couple of times to stop the cooking. Drain completely.
- Toss potatoes with 1` teaspoon salt and ¼ teaspoon pepper.
