- 1 red onion (large, about 3/4 lb, peeled and sliced thin)
- 1 garlic clove (small, minced)
- 1 1/2 lb. russet potatoes (about 3 medium sized potatoes, peeled and cut into 1-inch chuncks)
- 1/3 cup heavy cream
- 1 Tbsp. cider vinegar
- 1 dash nutmeg
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup Gruyere cheese (shredded)
