Tasty but this recipe as written makes a sticky scrambled mess in the pan that you can’t turn over the cakes without making a scrambled dish.
The issue can be fixed the problem by adding a bit of flour (couple tbsp) and also after shredding the zucchini very important to wrap in a towel and squeeze out the moisture before adding. They stay in patties and are very tasty.
