I’ve made this three time according to the recipe, and one time with beef broth (because I had it). We all love it, even my mom who is a self-proclaimed soup connoisseur 😄

I read the comments that came before mine and made the following changes to the recipe. I added a extra potato - so about 5 cups (but 2lbs) which made the soup nice and thick. I also added curry and thyme - but omitted dill. I used an immersion blender to make it nice and creamy. A wonderful winter soup! I’ll make it again.

Taste is good, found it on the thin side though. Would make again, maybe flour the veggies for a little thicker consistency.

Used 3 tablespoon of bacon grease instead of butter.
Had little leeks so used 2 cloves of shallots in addition to the leeks.
3 potatoes
Added thyme-1 tsp
1tsp Curry
1 tsp white pepper

This is delicious and much easier to make than I thought it would be. I’ve already made it three times. It’s a perfect soup for the frigid winter weather!

Sooooo yummy! I added diced ham to mine. This is a recipe I've added to my recipe book because it was so easy to make!

The recipe was a hit and I WILL make it again. I did add 1 cup of white onion along with leeks and celery. My family loves dill so I amped it up with dried and fresh dill.
