I love this dairy-free potato leek soup. Sometimes I toss in some leafy greens at the very end, right before blending everything. Another good way to sneak veggies into kids.

Quick, easy, and delicious. We served with both croutons and bacon bits on top. A dollop of sour cream in the middle made a nice accent, too.
