- 1 medium onion (diced, ~1 cup)
- 1 red bell pepper (large, diced, ~1 cup)
- 4 large garlic cloves (finely chopped)
- 1/2 cup sliced green onions (finely)
- 1 1/2 tsp. Creole seasoning (see above–or use store-bought)
- kosher salt
- freshly ground black pepper
- fried eggs (1-2 per person)
