- 400 grams potatoes
- 200 grams flour
- 1 egg
- 50 grams Parmesan cheese
- 1 tsp. salt

Directions
- Boil the potatoes (better the night before or 12 hours ahead of time), peel potatoes and pass through a ricer.
- Add the flour and egg after. The dough needs to be a solid enough consistency to stay together. Not too liquidy, but also not too hard.
- Take small sections of the dough and roll them out about 1 thumb in width and one foot in length. Next, cut the roll into thumbprint sized pieces (the size is really up to you - you can even use a fork to press a small design on the top).
- Prepare a tray with flour and put all the cut pieces of pasta on the floured tray so they don’t stick together. To cook, prepare the water with salt and when it is boiling, add the gnocchi. They are ready when they float to the top (and you can take them out in batches with a slotted spoon as they begin to come to the surface).
