- 1 Tbsp. minced fresh ginger
- 1 Tbsp. curry powder
- 2 tsp. Garam Masala
- 2 tsp. ground cumin
- 1 tsp. ground turmeric
- 1/4 tsp. kosher salt (plus additional to taste)
- 1/4 tsp. cayenne pepper (plus additional to taste)
- 2 lb. Yukon Gold potatoes (peeled and ¾-inch diced, about 4 potatoes)
- 14 oz. chickpeas (reduced sodium, rinsed and drained)
- 14 oz. diced tomatoes (in their juices)
- 14 oz. light coconut milk
- 1 tsp. granulated sugar (optional; I find it better balances the flavor, though you can wait to add it if you prefer)
- 1 Tbsp. freshly squeezed lemon juice
- 1 cup frozen peas (no need to thaw)
