These were delicious. I subbed green onions for the chives because I had them on hand. Also used russet instead of yukon gold for the same reason. I pan fried them on a griddle like you would a regular pancake instead of in oil. They are great as a vegetarian main topped with salsa, sour cream, ketchup., sautéed mushrooms, etc.
