- 1 cup fresh sage
- 1/2 cup toasted walnuts
- 1/2 cup asiago cheese
- 2 Tbsp. extra-virgin olive oil
- 1 clove garlic
- 1 Tbsp. lemon juice (Fresh Squeezed)
- 1/4 tsp. sea salt (or to taste)
- 1 cup gruyère cheese (– shredded and divided)
- 1 cup pecorino romano (– finely shredded and divided)
- 1 1/2 lb. yellow potatoes (– 1/8 inch slices, about 5 cups sliced discard the ends)
- 1 lb. butternut squash (Sliced, cut into 1/8 inch round slices, about 4 1/2 cups)
- 1/2 white onion (Large, – diced)
- 2 cloves garlic (– minced)
- 1 Tbsp. extra-virgin olive oil
- 1/4 cup dry white wine
- 2 Tbsp. salted butter
- 3 Tbsp. brown rice flour (or regular)
- 2 1/4 cups milk (I used 1% organic)
- 2 tsp. sea salt (– divided)
