I did it with 100% all purpose fleur and it works really well. Just a little too sticky. My recommendation: weight the buns and every single one would be identical to the other.

Excellent recipe, Needs a bit more flour, I find, and I reduced the sugar to 3 teaspoons, but this recipe is simple and reliable. Makes 6 large burger buns.
