These potato bites are super cute when finished and made for a convenient appetizer (you know, finger food), at a pre-football game get-together. They did well on a warm setting in a crock pot after being cooked as the directions state.
I did not add the bacon, so they were a vegetarian option for everyone, but they still had tons of flavor. I did add salt to the potatoes when I tossed them with the olive oil before baking them. It gives the skins a little more flavor. I also added some dried Hidden Valley Ranch powder to the whipped potato mixture, along with the cheese, whipping cream, sour cream, etc.
The only con to this recipe is that it takes a while to hollow out and refill each little potato. You definitely need to plan for extra time to accomplish that part of the recipe.
