- 1 1/2 cups sugar
- 1 cup kosher salt
- 3 cloves
- 2 pieces star anise
- 1 1/2 bay leave (torn in halves)
- 1 cinnamon stick
- 3/4 Tbsp. black peppercorns (white peppercorns are suggested)
- 1/2 Tbsp. fennel seeds
- 1/2 Tbsp. coriander seeds
- 1 cup extra virgin olive oil (three cups is suggested)
- 12 oz. lager (1 1/2 cups Sagres is suggested)
- 1 Tbsp. pepper (Spanish Nora)
- 1 Tbsp. sweet paprika
- 1 Tbsp. smoked paprika (instead of the three peppers I used 3 Tablespoons of Spanish Sweet Paprika is suggested)
- 1/2 yellow onion (thinly sliced)
- 7 garlic cloves (thinly sliced)
- 3 fresh bay leaves (torn)
