- 2 lb. yukon gold (Maine, PEI, or other all-purpose potatoes, peeled and sliced 1/3-inch thick)
- 4 cups fish stock (as a last resort, water)
- 2 cups canned whole tomatoes (from a 28-ounce can, in juice, cut into 1/2-inch dice, measured with their juice)
- 6 oz. sausage casings (spicy chouriço or andouille, removed and sliced 1/4 inch thick)

- freshly ground black pepper
- 2 lb. merluza (skinless silver, cod, haddock, or bass fillets, pinbones removed)
- 2 Tbsp. parsley leaves (coarsely chopped flat-leaf)
