Portugese Baked Eggs is similar to a Sofrito based sauce recipe that I discovered in a Cuban cookbook 10 years ago. Tasty as a Breakfast menu, obviously, but I served as an appetizer for dinner ( Spanish Cuisine ) and it was a killer surprise for all! Recommend a touch of Cumin as an additional ingredient/spice ( Oregano + Cumin are deadly combos for any Spanish type sauce ). Served it up w/ a tasty Spanish wine and everyone recommended I take up cooking for a living ( I Wish ).
