- 8 spring roll wrappers (– 10, I used Blue Dragon Spring Roll Wrappers)
- 1 avocado (sliced)
- 1 kale leaves (– 2 lacinato, cut into strips)
- fresh mint leaves
- 1 cup light coconut milk (canned)
- 1 Tbsp. red curry paste (I used Thai Kitchen Red Curry Paste)
- 2 Tbsp. sugar (all natural, no, or salt added peanut butter)
- 1/2 Tbsp. rice vinegar
- 1 tsp. Sriracha
- 1 pinch sea salt
