- 40 grams cheese (chevre, or other soft goat cheese)
- 1 avocado
- 1/2 lemon juice
- 1/4 tsp. salt

- 1 red onion (medium-sized, peeled & thinly sliced)
- 1 Tbsp. butter

This turned out to be one of the best meals for ages! Left a few things out but added lots of garlic, thyme and lemon to the mushrooms and paprika, sumac and chilli to the halloumi. Added sweet chilli sauce to the onions and a blob of onion and garlic dip on top. But the principle of halloumi, mushroom and the caramelised onions is divine.
