- 4 lb. brisket
- 2 Tbsp. olive oil (for browning the brisket)
- 2 tsp. ground pepper (fresh)
- 2 tsp. dry mustard
- 2 tsp. fresh sage (minced)
- 2 tsp. fresh thyme (minced)
- 1 Tbsp. kosher salt
- 4 cups chicken broth (homemade is best)
- 12 oz. beer (Porter, stout is cool too)
- 6 whole prunes (kind of strange, but works)
- 4 bay leaves
- 2 tsp. brown sugar
- 4 cups onions (sliced, about 3 medium onions)
- 6 whole garlic cloves (peeled)
- 1 lb. mushrooms (halved)
- 1 lb. carrots (peeled and cut into 1 1/2 inch pieces)
- 2 Tbsp. Dijon mustard
- 1 Tbsp. malt vinegar (I actually used red wine vinegar)
