- 1/2 cup finely chopped onion
- 3 shallots (Peeled and Finely chopped)
- 3 carrots (Finely Chopped)
- 4 cups ruby port (You do not have to use the expensive stuff)
- 2 cups dry red wine (Hearty, Cabernet or Syrah will give the most flavor)
- 2 sprigs fresh rosemary
- 3 bay leaves
- 1 cup beef (or Veal Broth, Homemade is preferred, or use the good stuff with lots of flavor)
- 2 Tbsp. cognac (or Brandy)
- 3 Tbsp. unsalted butter
