- 500 grams pork shoulder (steaks, roughly chopped)
- 200 grams smoked streaky bacon (roughly chopped)
- 1/2 tsp. ground allspice
- nutmeg (good grating)
- 1 Tbsp. sage leaves (finely chopped)
- 1 gelatine leaf
- 500 mL chicken stock (pot good-quality, reduced to 200ml with 2 bay leaves)
- cheese (choice of strong British cheese - cheddar, Stilton, Caerphilly, etc)
- pickles (choice of pickles, piccalilli, tomato, onions, apple chutney, etc)
- rustic bread (simple, preferably sourdough)
- salad (with radish, simple, cherry tomatoes or celery)
