- 6 oz. ground pork (lean fat ratio 7:3)
- 2 green onions (minced)
- 1 Tbsp. grated ginger
- 1/4 tsp. Sichuan peppercorn (ground, or five spice powder)
- 2 Tbsp. peanut oil
- 1 1/2 Tbsp. light soy sauce
- 1 Tbsp. Shaoxing wine (or dry sherry)
- 8 oz. sauerkraut (drained and squeezed dry, then chopped, yield about 1 loosely packed cup after chopping)
- 1 Tbsp. toasted sesame oil
- 1 pkg. dumpling wrappers (store-bought or homemade)
- 2 Tbsp. peanut oil
- 2 Tbsp. chinkiang vinegar
- 1 Tbsp. light soy sauce (or to taste)
- 2 tsp. sesame oil (toasted)
- chili oil (Homemade, Optional but highly recommend)
