- 600 grams pork fillet (trimmed)
- 1/4 cup Dijon mustard

- 2 shallots (large, finely chopped)

- 1 tsp. fennel seeds (toasted and coarsely ground, plus extra to garnish)
- 8 slices prosciutto
- 2 sheets puff pastry (25cm x 25cm, partially thawed)
- 1 egg (lightly beaten, for eggwash)
- 2 green apples (core removed, thinly sliced)
- 1 fennel bulb (small, thinly sliced, we used a mandolin)
- 1 head radicchio (leaves separated)
- 1 cup parsley leaves
- 1/2 lemon
