- 2 Tbsp. fresh mint (finely chopped)
- 1 tsp. dried mint
- 4 tomatoes (cut in wedges)
- 1/2 small red onion (thinly sliced)
- 1 cucumber (medium, seeded and sliced ½ inch thick)
- 1/2 cup pitted kalamata olives
- 3 oz. feta (coarsely crumbled)
- 2 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- 1 tsp. dried oregano
- 1 1/2 lb. pork loin (trimmed of silver skin and excess fat, cut into 1-inch cubes)
