- 1/2 cup chicken liver (chopped)
- 2 shallots (thinly sliced)
- 3 slices thai ginger (chopped)
- 1/2 tsp. minced garlic
- 2 Tbsp. lemongrass (finely minced)
- 3 Tbsp. fish sauce
- 1 tsp. sugar
- 2 Tbsp. lime juice
- 1/2 tsp. pepper flakes (very hot Tian Shan)
- 1 Tbsp. chopped coriander (stems)
- 1 spring onion (chopped, green and white parts)
- 1 Tbsp. mint leaves (chopped)
- 2 Tbsp. jasmine rice (roasted and ground, roast the rice, stirring, in a small saucepan over medium heat for about 8 minutes, let it cool down and then grind it in a blender)
