- 11 oz. beer (dark, malty, I recommend cream stout)
- 2 tsp. fresh parsley (finely chopped)
- 1 tsp. fresh rosemary (finely chopped)
- 1 tsp. fresh thyme (finely chopped)
- 2 cups cheese (shredded kasseri, can also use Provolone or Muenster)
- 1 egg
- 1 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 pkg. phyllo dough
- 2/3 cup olive oil (for brushing phyllo sheets)
