Description
Note: Spiraled zucchini can be used instead of pasta. If using spiraled zucchini, skip step 2 and add in step 4.
Ingredients

- 1 lb. rotisserie pork
- 1/2 cup olive oil
- 1 pt. mushrooms (quartered)
- 1 yellow onion (medium-sized, diced)
- 1 pt. cherry tomatoes (halved)
- 7.25 oz. red peppers (roasted)
- 2 1/2 Tbsp. pesto
- 8 oz. penne pasta

Directions
- For the Pork: Dice rotisserie pork. Set aside.
- Bring ½ gallon of water to boil in large stockpot. Cook pasta according to package instructions.
- In large saucepan, heat olive oil, add mushrooms and onions and sauté until tender, approximately 5 minutes. Add cherry tomatoes, roasted peppers and diced pork to the pan, simmer for 5 minutes.
- To Finish: Add cooked pasta to the sautéed vegetables, stir in pesto and pork and cook for 3 minutes.
