Note: Spiraled zucchini can be used instead of pasta. If using spiraled zucchini, skip step 2 and add in step 4.

  • 1 pound rotisserie pork
  • 1/2 cup olive oil
  • 1 pint mushrooms (quartered)
  • 1 yellow onion (medium-sized, diced)
  • 1 pint cherry tomatoes (halved)
  • 7.25 ounces red peppers (roasted)
  • 2 1/2 tablespoons pesto
  • 8 ounces penne pasta

    Directions

    1. For the Pork: Dice rotisserie pork. Set aside.
    2. Bring ½ gallon of water to boil in large stockpot. Cook pasta according to package instructions.
    3. In large saucepan, heat olive oil, add mushrooms and onions and sauté until tender, approximately 5 minutes. Add cherry tomatoes, roasted peppers and diced pork to the pan, simmer for 5 minutes.
    4. To Finish: Add cooked pasta to the sautéed vegetables, stir in pesto and pork and cook for 3 minutes.
