- 60 mL coconut cream (seasoned with a pinch of salt and caster sugar, ¼ cup)
- 1 lettuce (1 baby cos, or 3 large cosberg, leaves separated)
- 1 bunch perilla leaves (each, Vietnamese mint leaves, mint leaves and betel leaves,, see note)
- nuoc cham ((see link to beef tartare recipe above) and thinly sliced spring onion, to serve)
- 100 mL cola
- 50 grams oyster sauce
- 2 1/4 Tbsp. soy sauce
- 2 Tbsp. fish sauce
- 2 tsp. sesame oil
- 1/2 tsp. peppercorns (kampot, see note, finely ground with a mortar and pestle)
- 300 grams pork neck (boneless)
- 50 mL rice vinegar
- 50 grams caster sugar
- 75 grams daikon (cut into julienne, about 1/8 small)
- 1/2 carrot (cut into julienne)
- 2 Tbsp. vegetable oil
- 2 spring onions (thinly sliced)
- 30 grams caster sugar
- 1 1/2 Tbsp. pineapple juice (preferably fresh)
- 1 1/4 tsp. fish sauce
- 1 1/2 tsp. soy sauce
