- 1 lb. pork knuckle (1 inch cubes)
- 1 onion (medium diced)
- 2 cans diced tomatoes
- 2 Tbsp. curry powder
- 1/4 tsp. allspice (ground)
- 1/4 tsp. clove (ground)
- 1/2 tsp. cinnamon (ground)
- 1 1/2 tsp. cumin (ground)
- 1/2 tsp. cayenne
- 1/2 cup dates (chopped)
- 1/2 cup golden raisins
- 3 cloves garlic (minced)
- 1 orange juiced
- 1/2 cup greek yogurt
- 2 Tbsp. mint (chopped)

Directions
- 1. Season cubed pork with salt and pepper
- 2. Brown pork in tall-sided skillet until brown on all sides, remove and save
- 3. Add onion and cook over medium/low until onion is soft and lightly browned
