- 4 lb. pork shoulder (ground)
- 2 tsp. salt
- 1/4 tsp. black pepper (ground)
- 1 bunch cilantro (stemmed, chopped)
- 2 jalapeno chilies (seeded, minced)
- 5 cloves garlic (minced)
- 1 Tbsp. fresh ginger root (minced)
- 4 russet potatoes (each, cooked and mashed)
- 1 Tbsp. cumin seed
- 1 Tbsp. coriander seeds
- 1 Tbsp. ramps (chopped)
- 1 Tbsp. cilantro (chopped)
- 2 tsp. garam masala
- 1 eggs (each)
- 1/4 cup all-purpose flour

- 1. In mixing bowl, place hot mashed potatoes
- 2. Add remaining ingredients and mix well to combine
- 3. Keep warm and set aside
