Ingredients

- 3 Tbsp. butter
- 1 crisp apple (large, firm)
- 3 Vidalia onion (or red onions)
- salt
- black pepper
- 1 bay leaf (large)
- 1 Tbsp. sugar (or light brown sugar)
- 2 Tbsp. cider vinegar
- 12 medium potatoes (thin skin, white or gold)
- cooking spray (non-aerosol)
- 2 1/2 cups shredded cheddar cheese (or easy melting cheese)
- 1 cup sour cream
- 1/2 cup finely chopped chives
- 4 boneless pork loin chops (1 1/2 inch thick)
- 1 tsp. cumin
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
- 1/4 tsp. allspice
- 2 Tbsp. olive oil (or vegetable oil)
- 1/2 cup chicken stock (or bone broth)

Directions
- Preheat oven to 475°F with rack at center.
- Peel and chop apple, halve and thinly slice onions.
- Heat a deep skillet over medium heat with butter. When it melts, add apples and onions and season with salt, pepper, bay leaf, and sugar. Soften but do not brown for 7-8 minutes.
