- 2 peaches (firm ripe, sliced [see Kitchen Notes])
- 1 Tbsp. balsamic vinegar (preferably white [see Kitchen Notes])
- olive oil (a drizzle of, plus more for the pan)
- 1/4 tsp. cayenne pepper ([or to taste])
- 1/2 cup sliced shallots ([you can substitute onion, but shallots are better])

Very good! This one is being added to my “keeper” folder! I think it will make an impressive, but deceptively easy, recipe for guests. I did half the cayenne to make it more palatable for the kids.
