- 500 grams pork (cut into 1cm cubes)
- 1 onion (finely chopped)
- 3 garlic cloves (finely chopped)
- 2 tsp. ground cumin
- 2 tsp. ground oregano
- 1 bunch coriander
- 400 grams chopped tomatoes
- 1 Tbsp. chipotle paste (or less to taste, any variant of chilli sauce or cayenne pepper can be used, but you won't get the lovely smoky warmth of the chipotle chillies)
- 400 grams beans (pinto, black or kidney beans all work here, rinsed and drained)
- 200 mL stock (or water)
