- 2 1/4 lb. pork belly (unscored, cut into 3-inch squares)
- 1 Tbsp. butter (each, and extra-virgin canola oil)
- 1 Tbsp. cumin seeds
- 5.5 oz. raw cashew nuts (or 50/50 almonds and pine nuts)
- 3 cloves garlic (finely chopped)
- 1 lb. fresh spinach
- salt
- freshly ground black pepper
- 1 qt. apple cider vinegar
- 2 cups jaggery
- 1 1/2 cups dark brown sugar
- 3/4 cup coarse sea salt
- 2 pieces cinnamon stick
- 6 red chilies (large, broken in half dried)
- 1 lime
- 2 1/2 cups chicken stock (good)
- 2 Tbsp. cilantro stems (chopped)
- 1 Tbsp. curry leaves (chopped, preferably fresh; if using dried, soak in water for 10 to 12 minutes and dry thoroughly before chopping)
- 2 cloves garlic (minced)
- 1 Tbsp. fresh ginger root (finely chopped)
- 1 green chile (finely chopped fresh)
- 4 cloves (lightly crushed)
