- 1 clove garlic (peeled & sliced)
- 1 red chilli (large mild/medium, sliced)
- 1 1/2 Tbsp. pomegranate molasses
- 1/2 Tbsp. vegetable oil (I used rapeseed, but sunflower or canola will also work)
- freshly ground black pepper
- 2 bay leaves
- 3 sprigs fresh thyme (leaves only)
- 1 pinch sumac (for each chicken thigh)
- 1/2 Tbsp. vegetable oil (for browning the chicken)
- sea salt
- black pepper
- 1 bunch flat leaf parsley (roughly chopped)
- 1 bunch fresh mint (roughly chopped)
- pistachio (or almonds, roughly chopped)
- 2 Tbsp. pomegranate seeds (fresh)
