- 2 green onions (finely chopped)
- 1 cucumber (medium, peeled, seeded, and diced)
- 1 avocado (ripe, peeled and diced)
- 30 mL cilantro leaves (chopped fresh)
- virgin olive oil (to taste)
- 1 lime (juiced)

- Carefully mix together all ingredients in a bowl. Season with salt and pepper. Serve on a bed of lettuce or in a sandwich, on soft, moist bread! Also good served on toasted baguette slices or bruschetta.
