- 1 cup Anaheim chile (sliced roasted, or your choice of pepper)
- 1 cup salsa (–- recipe below or your favorite store bought.)
- 1 1/4 cups shredded cheddar cheese (and a jack cheese mixture; set aside 1/2 cup for topping)
- 3 beaten eggs (large)
- 1/4 cup onion (finely chopped)
- 1 cup tomatoes (finely chopped juicy)
- 1 whole jalapeno chilies (finely chopped)
- 1 Tbsp. cider vinegar
- 1 pinch sea salt
- 2 Tbsp. olive oil
- 1 tsp. honey
- 1/2 tsp. fresh cilantro (or Italian parsley, if you prefer - chopped)
