Poached Eggs & Lentil Hash is perfect for brunch or dinner. Hearty lentils combined with savoury veggies and topped with a poached egg. Meatless & gluten free!!
Ingredients

- 4 cups lentils (pre-cooked or canned)
- 1/2 red onion (diced)
- 1 yellow bell pepper (large, diced)
- 4 fresh tomatoes (medium, diced)
- 5 fresh mushrooms (large, sliced)
- 1 1/2 cups baby kale
- 2 Tbsp. olive oil
- 1 tsp. seasoning (Herbs de Provence)
- 2 tsp. Sriracha sauce
- salt
- 6 eggs (poached)

Directions
- Pre-cook your lentils (this can de done a day or two in advance) If you are using canned, drain & rinse
- Start your egg poaching (method of choice)
- Heat oil in heavy skillet
